It can be cheaper to produce

Licensing gaming products can be an expensive endeavour. The casinos you see only typically don’t produce their games, they license the titles from another provider.

For the casino game providers, it may be cheaper to produce a live dealer game than it is to create a new video-game-style title. These savings are usually then passed along to the casino as well, making it circular savings across the board.
